Delicious and Healthy Taco Salad Bowl

I LOVE Mexican food and tacos are probably the highest on the list! I’m hoping you guys are just as excited about this delicious taco salad bowl as I am because not only is it healthy, it’s packed full of lean protein, fibre and healthy fats too which will keep you full for hours afterwards! I’ve made a few healthy subs in this recipe such as sour cream for natural YoPRO, beef mince for chicken mince and guacamole for plain avocado. Delicious and Healthy Taco Salad Bowl

  • 15 tortilla strips/ plain corn chips (or 1 large taco shell - heated until crispy and broken into pieces)
  • 140g chicken or turkey mince (raw)
  • 1-2 tbsp taco seasoning + 1-2 tbsp water
  • 2 tbsp avocado
  • 2 tbsp natural YoPRO
  • 2 tbsp salsa
  • 1-2 cups of mixed lettuce leaves
  • 2-3 small (cup) mushrooms
  • 1-2 cups of non-starchy vegetables such as; tomato, cucumber, capsicum, carrot, red onion


  1. Heat a non stick fry pan and pan fry the mushrooms until brown, remove from pan
  2. Add the chicken mince and cook until it starts to brown, add the taco seasoning and water and continue to cook until the sauce thickens and the chicken mince is cooked through, remove from heat
  3. Add the salad leaves to the bottom of a wide bowl
  4. Layer all the vegetables into the bowl including the mushrooms then add the mince, YoPRO yoghurt, avocado and salsa. You can either stir everything together so the salsa and yoghurt cover everything or layer it separately like I have in the photo. Use the tortilla strips like a spoon to scoop the other ingredients and eat them!
  5. ENJOY!
